I still remember when i’m doing a part time job as an housekeeping. Every lunch time was a wonderful the chef making my own meal because i am moslem he explain i cannot eat this and that so he fry an egg although he is really busy he keeps all of us eat first before him. So gratefull!!

I read an article in New Yorker magazine ( I think) about 30+ years ago. It was an interview with the head chef at a N.Y.C. top restaurant. It seemed that he was working at least 80 hours a week on a regular basis . I have worked 70+ hour weeks but not all the time. I’m sure he was making big bucks but NO THANKS.

I’ve been to Gabriel Kreuther and Aquavit and they were excellent. I would definitely like to try this restaurant given they have brought back meat protein.

I was a little confused about consistency. Seems like every dish needed tweaking. Would think the chefs would have these dishes mastered. I’ve never worked in a kitchen obviously lol.
