The ribs are seasoned with two of my world-famous rubs, bathed in my unforgettable Butter Bath and Wrap, and topped with a layer of my sticky-sweet BBQ sauce. They cook low and slow, giving you the ultimate pit-master experience.

I did two slabs of ribs following your recipe to the letter and they came out superb. The only thing I did different was cook mine at 200° instead of 225° as my smoker seems to cook a little bit on the hot side. After I put the sauce on them for the last hour, I just put them on pure smoke and they were awesome!

For all Europeans watching, 3-2-1 is only feasible if you have a giant slab like in the video. In my experience (Belgium), ribs that size are harder to come by for us. Keep that in mind when you go for this. Other than that amazing video as always.

I need some help, fellow smokers.

I have a Pro 34 smoker and I tried smoking ribs using the 3/2/1 method. I set the temperature to 225F and smoked them for three hours. Then, I wrapped them with foil and some liquid inside and smoked them for another two hours at 225F . After unwrapping, I smoked them for another hour at 225F. However, when I tried to eat the meat, it was still pretty raw in the middle portion for some reason. Can anyone help me figure out what went wrong? I would really appreciate it. Thanks!

INGREDIENTS:

Low and Slow for great Q is my motto. 180° for 3, wrap, bump up to 225° for 2, then sauce and back on the grill for 10 min to an hour if necessary. Fall-off-the-bone .

1. Get Traeger Grill or grill of choice up to 225º. We used Royal Oak Pellets for this cook.

2. Trim ribs to your liking, remove the membrane.

4. Season ribs with Heath Riles BBQ Hot BBQ Rub and then Heath Riles BBQ Sweet BBQ Rub.

5. Flip ribs and repeat steps 3 & 4.

6. Put ribs on the grill for 3 hours.

I used to use the 3-2-1 method for ribs when I first started smoking meats. I’ve moved from that method as the ribs always come out overcooked. Hence Heath saying if you like “fall off the bone ribs” which means over cooked in my opinion. Great for beginners though! Love your vids!

7. After 3 hours, remove ribs and wrap with Heath Riles BBQ Butter Bath (1/4 cup butter bath to 3/4 cup of apple juice for each slab of rib you are cooking) in foil.

8. Place ribs back on the grill for an additional 2 hours.

10. Unwrap ribs and sauce with Heath Riles BBQ Sweet BBQ Sauce or sauce of your choice.

12. After 1 hour, remove ribs from grill.

This method is all I use because it is full proof and comes with the added benefit of being able to cook to a clock so I know exactly when they will be done. Also, a heads up on the Butter Bath. It works just as well with Pineapple juice and the ribs will have no pineapple taste. Apple juice is hard for me to get in those 8oz bottles at my store, so I took a chance one day and picked up a 4x6oz pack of Pineapple juice and Walla...lol! 6oz Pineapple juice+ 1/4 C Butter Bath=Perfecto! Pineapple juice is also a natural meat tenderizer....Thanks for sharing Heath, Much appreciated!

I did this similar cook on my Traeger using the butter bath a few weeks ago. I did 3/2 at 225 and I could barely keep them together. They fell apart maybe a little too easy. There was no way I could have left them on the full hour after I put the sauce on. Very tasty, you just have to take note that they will be fall off the bone, rather than pull of the bone. I love the butter bath, now I just have to get me more Heath Riles rubs!
