After visiting Japan, I must say I see Bourdain from another perspective. He was no simple man. He enjoyed life, that is for sure. But intelligent and non simple persones seem to internalize many tastes in life that creates conflicts hard to cope. Something like a chronic pain you don´t know where the heck comes from. Rest in peace and enjoy up or down there wherever it is.

I'm sorry, but there is no way that sushi in New York can compare with in Japan, regardless of the technique, skill or intention of the chef. It will never be better than second class. You cannot take food out of its cultural context and expect to have the full experience, especially when it is relocated into a culturally primitive and barren place like the US.

eating raw fish is not only japanese thing. all coastal areas eat raw fish, one form or another

local ingredients, small farmers produce, animals and birds treated good through their life, eating max of the produce, eating balanced and seasonally. that is luxury. every day luxury. i like how japanese respect the food, the fish and cows it coomes from. same should do every region on earth. sure i eat avocado or two occasionally, but the local carrots, cabbage, peas, potatoes and fi are the best. i eat all of the animal, skin, inner organs. this is terrible wasting how people only eat filet. and big chunks. and wonder why they are fat. people eat way too much meat in Usa and Europe. meat is for seasoning, not to eat big chunks of it every day. ask how your grandparents ate after ww2, then you know what balanced and healthy eating looks like.
