I used this recipe with the additions of 3/4 c golden raisins and 1 cup of oil plus 1/3-1/2 cup crushed pineapple. It was the most delicious cake I’ve ever made or eaten!!! Tks!

Just made it in a 9x13. 350f for 50mins seemed good for my oven. I halved the icing recipe as directed and it was the perfect amount. I added 1/4tsp ground cardamon and 3 freshly ground cloves. aaamazing ! Also added 2 small boxes raisins and little less than a cup of toasted walnuts (that i toasted while i was preheating)

3 cups of carrots
1 cup of pecans

2 1/2 cups of AP flour
1 tsp of salt
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
whisk

1 cup gran. sugar
1 cup of brown sugar
1 1/3 cups of vegetable oil
4 large eggs
2 tsp vanilla extract

Mix the wet into the dry but make sure there are streaks of flour left to add the carrots and pecans!!

bake for 350 for 30-35 minutes!

thank you for sharing this recipe! I followed the recipe from your website, i just switch the pecans with half toasted walnuts and half raisins, reduced total sugars to 75% by reducing the granulated sugar, replace 1/3 of the oil with greek yogurt per your recipe, and the cake turned out amazing! my friends loved it and it stays really moist, even in the fridge because no butter was used, and not too sweet. I failed with the butter cream cheese frosting tho bc i over mixed it :'), but i'll def try again and recook this cake for the future!

Let me tell yall, this recipe will give you an amazing carrot cake 🤤. This was my second time ever making a cake it had the perfect amount of sweetness and came out great everyone loved it!. Definitely will try more recipes.

I just made this for my grandma for Mother's day. I did, however used a different type of sugar since she's diabetic. It's super moist and soft. Thank you so much for your wonderful recipes over the years....I just know she will loveeee this

Greetings from across the pond ! I have to say that I have followed quite a few of your recipes ‘to the dot’ and they always come out fabulous. I have to say that this recipe was delicious BUT . . . . In the size of cake tin, it did not have the rise I wanted, required longer for the cooking and I will line the sides next time due to the edge of the cake being a little crispy ! But thank you very much - a true gem and very well received by the people who tasted it !
