BEST Carrot Cake Recipe
Video Overview & Insights
This classic carrot cake recipe has it all: an addictively moist crumb, subtle, warm spices, plenty of sweet carrot flavor, crunchy pecans, and a rich, tangy cream cheese frosting. My easy carrot cake recipe is perfect, and I think once you bake it, you’ll say the same! With loads of freshly grated carrots, depth from vanilla and brown sugar, and velvety cream cheese frosting, this subtly spiced cake is bound to be your new favorite. Fresh carrots and vegetable oil keep the cake super moist for days after baking, so you enjoy slices all week long.
I baked this cake and everyone thought I bought it, that's how good it is this recipe!

@svmtoQuestion for the spices, can you add all those measurements of spices in cake (cinnamon, cardamom, all spice and cloves) or are you saying just to pick one?

@nabeelajayafar2731I usually make cupcakes with this and they come out SO GOOD!ty!
@pragnareddy7158Just made it in a 9x13. 350f for 50mins seemed good for my oven. I halved the icing recipe as directed and it was the perfect amount. I added 1/4tsp ground cardamon and 3 freshly ground cloves. aaamazing ! Also added 2 small boxes raisins and little less than a cup of toasted walnuts (that i toasted while i was preheating)
@resreiapples3 cups of carrots
1 cup of pecans
2 1/2 cups of AP flour
1 tsp of salt

1 cup gran. sugar
1 cup of brown sugar
1 1/3 cups of vegetable oil
4 large eggs

Mix the wet into the dry but make sure there are streaks of flour left to add the carrots and pecans!!

@ArielDuPlumeI LOVE you AND your cake recipes! You are my go-to for anything sweet. I told my kids I want your book for my birthday! Greetings from South Africa ❤
@ArielDuPlumethank you for sharing this recipe! I followed the recipe from your website, i just switch the pecans with half toasted walnuts and half raisins, reduced total sugars to 75% by reducing the granulated sugar, replace 1/3 of the oil with greek yogurt per your recipe, and the cake turned out amazing! my friends loved it and it stays really moist, even in the fridge because no butter was used, and not too sweet. I failed with the butter cream cheese frosting tho bc i over mixed it :'), but i'll def try again and recook this cake for the future!
@yukishakuraIf i need a smaller one can i just divide everything by 2 ?
@achref5829I just followed your step-by-step directions and I can truly say you’re the goat. Keep the videos coming, bro.
@thaddo6605Can I use coconut or almond oil , or pecan oil vs apple sauce. Vegetable oil, etc?

@raghav268I just made this for my grandma for Mother's day. I did, however used a different type of sugar since she's diabetic. It's super moist and soft. Thank you so much for your wonderful recipes over the years....I just know she will loveeee this
@mariahcharles8920I made half of the batter and only one layer and I just ate my first slice of the cake: It tastes AMAZING! 💖Thank you! Thank you for this amazing recipe, it was so worth the effort! 😄
@9curryActually, your mom was probably was making a Hummingbird cake if she used pineapple and raisins.
@darrylwhite2061Greetings from across the pond ! I have to say that I have followed quite a few of your recipes ‘to the dot’ and they always come out fabulous. I have to say that this recipe was delicious BUT . . . . In the size of cake tin, it did not have the rise I wanted, required longer for the cooking and I will line the sides next time due to the edge of the cake being a little crispy ! But thank you very much - a true gem and very well received by the people who tasted it !
@guitasifyI halfed the whole recipe and substituted melted unsalted butter instead of vegetable oil. Turned out ridiculous good. Wife loved it too. Thanks.
@DReese8533This guy is reading my mind ❤
