In case anyone doesnt have a bread pan with a lid but want that square shaped bread, place a parchment paper on top of the bred pan and then place an oven proof dish on top of that and the bread will come out in a perfect cube, just make sure the mould is only like 70% full tho or youll have a bit of a mess on your hands.

Thanks so much for this recipe! I live at 8500ft and when I made these I couldn't get the internal temp to get past 198F without over baking the outside (which I bet I did). I even covered them with foil when they were getting too hard. Any advice?

Many people think baking is complicated, but this recipe is perfect for beginners! Wonderbread is quick, simple, and delicious. Plus, it’s gluten-free!

With just a few basic ingredients and a blender, you can make fresh, homemade bread in no time.

Why This Recipe:

While there are many rice-based bread recipes from places like Taiwan, China, and India, this one is unique because it uses easily accessible, off-the-shelf rice. The dough comes together effortlessly in a high-powered blender, and the results are fantastic!

The Recipe:

360 g (2 cups) raw white rice

240 g (1 cup) water, room temperature

45 g (3 Tbsp) vegetable oil or vegan butter

6 g (1 tsp) salt

25 g (2 Tbsp) light-brown sugar or maple syrup

7 g (2¼ tsp) instant yeast

Directions:

Choose the Right Rice:

Opt for rice that’s naturally soft, springy, and fragrant. Short-grain Japanese and Taiwanese rice yield the best results. Avoid long-grain rice (like basmati or jasmine), glutinous rice, or rice flour as they don’t work well for this recipe.

Soak the Rice:

Wash the rice as you would for cooking, then soak it in fresh water for 2 hours at room temperature.

Drain and Blend:

After soaking, drain the rice well and transfer it to a high-powered blender. Add the water, vegetable oil (or vegan butter), salt, sugar, and finally the yeast.

Blend to Perfection:

Blend the mixture for 2-3 minutes until it is very fine. Any unblended rice will cause problems in the rising and baking process, so ensure there are no grains left. The batter should be smooth and creamy.

Check the Temperature:

The batter should now be warm, around 40°C (105°F). Be sure it doesn’t get hotter than that, as this can kill the yeast.

Prepare the Loaf Pan:

Lightly grease a non-stick loaf pan (or line it with parchment paper). Use a pan about 24 cm x 10.5 cm x 9 cm in size. Pour the batter into the pan, but only fill it halfway to allow room for rising.

Proof the Dough:

Cover the pan and proof the batter at 40°C (I use my oven’s lowest setting) until it is about 1½ times the original size. This should take around 45 minutes to an hour.

Preheat the Oven:

Once the batter has risen, preheat your oven to 190°C (375°F). When the batter has nearly doubled in size, it’s ready for baking.

Bake the Bread:

Bake the bread uncovered for 35-40 minutes, or until the top is golden-brown. During baking, spritz the top with water every so often to prevent the batter from drying out.

Cool the Bread:

After baking, carefully remove the bread from the pan and let it cool on a wire rack. While it’s best enjoyed fresh, it can last for a few days in the fridge.

Final Thoughts:

I made this bread 3 times and everytime it turns badly, I use the ninja blender and make the recipe in to two parts. Maybe that's why and I'm using active dry yeast

It actually has gluten. The governments definition of gluten free means below “THEIR” definition. Any gluten to a celiac causes a problem. There is no known safe level. Also rice has a compound in it that causes the same reaction as it mimics gluten in some people.

Warning: If you're a type 2 diabetic, don't even THINK about making this bread. It will make your blood sugar rise at least 200 points. Try a non-grain flour bread recipe instead. 🙂

Try using grinder. These are usually used in India. Doesn’t get heated and the flour gets fluffy.
