As a professional Mexican, I approve these tacos. (FYI: A chargrilled beef taco with cheese is called a “gringa” o “pirata”. In some places a “gringa” is made on flour tortillas with pastor style pork and melty cheese).

Life hack. “Some limes don’t have more juice then others” if you know how to pick a ripe juicy lime. For best flavor and most juice. Look closely at the rind of the lime. If it’s pitted and looks more like a golf ball. You want that, smooth and glassy is a put back and keep searching. Hope this helps especially for making fresh pico🙏🙏

Great recipe, looks yummy. Unfortunately any sort of steak is far too expensive to actually eat where I live (skirt steak for 2 people runs about 14-16 USD in my country), which practically makes it a very luxury item. That's also on the lower end of steak prices, most other cuts are $20+++ for the same amount.

Mexican cooking typically doesn't use this* (I'll explain later) for marinades. It mostly only appears in the Yucatan. Countries in the Caribbean (Cuban, Puerto Rico, Dominican Republic) do use this as a foundational ingredient in marinades and sauces. Outside of the Yucatan where bitter oranges are grown Mexican cooking just uses limes.

The "this" is the Bitter orange (Citrus × aurantium) fruit but it's sometimes referred to as a Sour orange, Seville orange, etc.). If you want the authentic stuff it's usually sold at Hispanic / Latin grocery stores under the name Naranja Agria (translates to bitter orange) with the most popular brand name being Goya.

As a side note, you might see something called Mojo Criollo next to or close to the Naranja Agria. This is a staple in Cuban cuisine and uses Naranja Agria in it. Translated it means Creole Marinade but this has nothing to do with Louisiana. This simply means a Spanish marinade that has been adapted locally.

and a pretty proper marinaded base for that asada flavor... and solid salsa recipe too.
only thing I'd as is that it's worth trying this using key limes (aka mexican limones). they're small but pack a more authentic flavor.
I like to take some thin sliced onions and mix them in with a bit of key lime juice and salt in a bowl / jar and let that sit while I grill so they pickle slightly, great add on to the tacos.
