If you’ve ever wondered what Claire Saffitz’s Thanksgiving dinner looks like, this video is for you.
Claire’s here to cook her ideal holiday dinner from start to finish. There are fluffy mashed potatoes, homemade cranberry sauce, caramelized brussels sprouts with lemon and an easy turkey recipe that keeps things simple using her foolproof methods, along with broth and gravy. And because no Thanksgiving is complete without dessert, Claire also shows us how to make her five new pie recipes: pecan slab pie, a cranberry cheesecake tart, a caramelized apple pie, a pumpkin pie with pepitas and a creamy lemon pie with honey and ginger. Make one or make them all. Happy eating!
Your person hates you, sadly, as shown through the next 2 years. I get being happy, but why is the illusion more important than reality?
00:00 - 1:11: Intro
1:12 - 2:07: The menu
Stupid question, but how did she get the pecan slab out of the pan without an overhang tin foil or parchment?
2:08 - 6:33: Make the pie dough
6:34 - 9:23: Start the stock
Nnnaaaaaaahhhhhh
9:24 - 14:04: Caramelized apple pie filling
14:05 - 17:10: Simmer and skim the stock
My goodness, why is she so hot? 🔥 Cutie 🥰
17:11 - 19:07: Brine the turkey
19:08 - 26:07: Parbake the pumpkin pie crust
it's Jan 17th 2026... No idea why, but I'm going to watch @CSaffitz cook an entire Thanksgiving meal. Do I even like Turkey? Nope. Lessgo!
26:08 - 29:43: Prepare the pecan slab pie
29:44 - 35:19: Fill and bake the pumpkin pie
Made the pecan bars and the glazed shallots. Both were hits and are staying on the holiday meal rotation!! Thank you!!
35:20 - 37:06: Make the cranberry sauce
37:07 - 40:43: Assemble the pecan slab pie
This was really fun - thank you. I watched while cooking something entirely different, and I loved it. I learned a number of things, and I can't WAIT to try the caramelized shallots.
40:44 - 42:54: Finish the stock and cranberry sauce
42:55 - 46:28: Assemble the caramelized apple pie
i can watch her cook all day everyday
46:29 - 55:34: Prep the stuffing
55:35 - 57:41: Prep the brussels sprouts
I am again humbling asking for an update of this.
57:42 - 1:02:27: Make the gravy
1:02:28 - 1:04:50: Make the glazed shallots
What temp do you bake the apple filling at?
1:04:51 - 1:05:38: Cook the turkey
1:05:39 - 1:11:44: Make the mashed potatoes
like
1:11:45 - 1:13:34: One hour warning
1:13:35 - 1:17:07: Carve the turkey
Second year watching this, there’s just something so comforting about her and her methodical way of instructing! I will be making glazed shallots this year and I can’t wait to try them!!!
1:17:08 - End: Enjoy Thanksgiving dinner

A tip for your stuffing to get that richness without heavy cream or butter (pumpernickel bread cubes as well) something about the pumpernickel bread creates that richness in flavor and the bread itself is better for you than just white alone... we still use some white (typically sourdough or Italian/French) and I swear to you - it's amazing how flavorful the pumpernickel is to the stuffing <3

I know a bit silly - but it’s fun seeing a left handed chef because I can visualize prep more easily!

I've made that apple pie and while delicious, it was applesauce pie! I won't precook my apples again. It must be particular to the type of apple, but I did it with pink lady like Claire suggested and they turned to complete mush.
@toryevanss4512Why didn’t we par bake the apple pie with all the juices?
@deannadinardo2443Sucks that these recipes are behind a paywall.

@kevingilburn4811I really like the video and all the recipes. She's awesome. It would be perfect if she cooks with hair tied. I saw multiple times of touching hair and then food.
@lilyyang5163There are so many Thanksgiving meal cooking videos. I’m watching this for the second year in a row. Probably tells you how much I enjoy this one.

@JohnnyJo90I have the jambalaya cookbook, said the girl from Louisiana!
@dipaschallI love Thanksgiving too, and I love to cook. Imagine my surprise moving back to Louisiana after having lived in Dallas for 35 years and was raised by a Texas family, even though we lived in Louisiana, the hostess served rice instead of mashed potatoes oh my God, so delicious and perfect with stuffing And gravy! I’ll never make mashed potatoes again on that day!!!
@dipaschallI have watched this episode for a few years now it’s always my go to to reinsure myself a perfect Thanksgiving dinner😊❤❤❤
@lauralarita2896I live in an apartment that doesn't even have a cooktop yet I watched this video like its Barbenheimer.
