Thanks for the tips and, in return, here's one for you. Nearly nobody in the UK says Worcestershire sauce because it's a mouthful for us too. We just say "Wooster sauce" and leave it at that.

I was watching a Japanese TV series called The Pride of the Temp and one segment of a show was about a cook in a company cafeteria who made a sensational curry. His secret was slow cooking the onions for hours every morning. I'll have to try cooking the onions a lot longer the next time I try Japanese curry.
I've tried both Golden Curry and Vermont Curry and both are excellent. The traditional cut for carrots involves rotating the carrot by 90% or so every cut, results in odd shaped pieces. Doesn't affect the taste no matter how they are cut.

This is my go to Japanese curry recipe. My boys love it
INGREDIENTS (for 8-10 servings):
► Large onions (2)
That looks like less than 2 pounds of onions.
► Medium carrots (2)
► Potatoes (3) - Yukon Gold work great
Soya. Toffu. And. Green. Peas. For. Healthy
► Garlic (2 cloves)
► Butter (1 tbsp)
I. Like. Green. Vegs. Like. Bottlle. Gourd. Sponge. Gourd. Carrots. Drumstick. Pumpkin. Raddosh. All. For. Healthy. No. Virus. Mostly.
► Water or stock (5 cups)
► Cubed beef or protein alternative (roughly 1 lb)

► Japanese curry roux (1 box, or roughly 8 oz/220g)
(Popular curry brands: Golden Curry, Vermont Curry, Java Curry, Torokeru Curry, Kokumaro Curry)

Optional ingredients:
You don't need Worcestershire sauce... That's a western thing
► Worcestershire sauce (1 tbsp)
► Ketchup (1 tbsp)
You boiled honny and advertised premade curry box.
► Honey (1 tbsp)
► Red apple (1) - Fuji or Honeycrisp work great
Don’t you have to cook it longer for thr chuck to be tender ?
PREP:
► Peel and cut potatoes into big bite-sized chunks
This recipe is a keeper. The flavor is very comforting and warm. ❤
► Soak potato chunks in bowl of water for 15 mins
► Peel and cut carrots into diagonal chunks
pro tip, the meat won’t turn tender like this. It hasn’t been cooked long enough. It’s worth boiling the meat and onions for an extra 30 minutes first, then adding the vegetables. This isn’t chicken.
► Slice onions into half-inch wide slices
► Mince garlic
One of the best meals I’ve made! It’s sooo good. I think next time I’m definitely going to be getting the spiciest roux and adding some less sweetness. I used 5 cubes (that’s all I had) for 1.5L of stock (I was making A LOT) it still came out a bit thinner than I’d like so let it simmer uncovered and added 1 tbsp of cornstarch slurry. Next time probably should get 2 boxes I probably just needed 1 more cube and could’ve left covered. Not sure if the butter was necessary I used chicken thighs and there were a bunch of rendered fat so just skipped it.
► Pat dry and salt beef cubes
► (Optional) Peel and grate apple using a fine grater
Kokumaro is the best
COOK:
► Pre-heat pot with cooking oil over medium heat
Thanks man, been wanting to make Japanese curry. I bought the same box you used here but the instructions are very vague so I appreciate the info.
► Add beef to pot and lightly sear for 2 minutes until sides are browned
► Remove beef from pot into a bowl/plate
After bringing it to a boil, simmer over low heat for about 20 minutes. When adding the roux, turn off the heat and let it dissolve completely. Then, simmer for another 10 minutes over low heat, being careful not to burn it. Forgetting this step will slightly diminish the flavor.
► Add onions and saute for 8 minutes until caramelized and translucent
► Add garlic and saute for 30 seconds
What's the best way to reheat the left overs?
► Mix in carrots and potatoes, saute for another minute
► Add cooked beef chunks back to pot, and add 5 cups of water/stock
WE BECOMING FLAWLESS WITH THIS ONE
► (Optional) Add grated apple, ketchup, Worcestershire sauce, and honey
► Stir, cover with a lid, and simmer for 20 minutes, stirring occasionally
I have seen this in shinchan so mant times. And used to look so delicious.
► Once pot comes to boil, check potatoes for doneness by piercing with a stick
► Filter out any scum/foam using a strainer
This is my fav Japanese curry recipe. My 2 boys love it and it tastes so good!
► Turn off heat, and mix in curry roux to pot, ensuring all blocks are fully dissolved
► Bring pot to medium-low heat, simmer for 15 minutes until sauce is thickened
I made this tonight, though I skipped the honey and apple (my hubby doesn't like sweet food), the curry smelled amazing and tasted even better. Love it!
SERVE:
► Serve with a bowl or plate of rice and enjoy!
This is hilarious. When the UK (where this recipe originates from) uses carrots, onions and potatoes we call it bland. but when Japan does it they suddenly become aromatic, delicious etc.
► Refrigerate any leftovers to re-heat another time (Japanese curry can typically last 2-3 days in fridge)

@ChrisD4335I made this tonight, but for the beef, I had a 2lb pack of ground beef/pork mix. I made 1 lb of 1/2ox meatballs. Then browned the other lb of meat for the curry. Served the meatballs with the curry and it was absolutely amazing.
