Tbh -- coming from me, someone who mainly just watches theories and thus isn't a good source on much -- my interpretation of Sun/Moon is this:
In Security Breach, Sun and Moon are in the same body but are two separate entities (much like M1 and M2 that share the same robotic body (just not at the same time) but are two separate entities). Then, in Ruin, you go in and you "fix" Sun and Moon to make Eclipse. Ruin is also the first reveal of the MXES machine (dunno if that's right -- I mean the machine that looks like the F10NA machine down by the Mimic) and the Mimic itself. On the path to the Mimic, you're "fixing" several parts of the route and even encountering the digital rabbit thing, which eventually comes out of the F10NA box. Considering rabbits being strongly tied to Glitchtrap and William in general and the digital rabbit thing being an enemy for you until the Mimic becomes the enemy, I just sort of figure they're on the same sort of side. I could be wrong on that tho haha
So, basically- In the same way that Sun and Moon are "fixed" and become Eclipse, the Mimic and the digital rabbit conjoining/meeting/whatever "fixes" it, I guess? You're putting together two halves of a whole, like with Eclipse. M1 and M2, Glitchtrap and M2, whatever you want to interpret it as. To me, Sun/Moon/Eclipse very much reads as a classic FNAF move -- explaining the overarching story through a smaller story arc

I thought the mimic in ending 2 was supposed to be M1, having been swapped back into her old frame.

I think the first ending is canon. Roll with me on this: So, what if instead of Arnold subduing the mimic, at some point the mimic is brought back to the property and AFTON does when he takes over the place. That David Murray becomes David Afton. And he creates human like skin for him, like we see he created with the fake heads in sister location.

“The baby isn’t mine”. Despite it looking and acting like his child, he isn’t. And that’s our crying child that gets bitten in fnaf 4.

Is Sun the original M1, and Moon the original M2?? I mean their personalities kinda carry over. Sun is the one that wants to care for the children, like M1 for David, and M2 has those violent outbursts. Then somehow they have both combined into one?? idk just seemed very coincidental...🤔

in the second ending m1 lliterally says as fiona something like "i watched my kid grow up through this machine" i know its not prove that fiona is possesing mimic but what if she actually is?

Do we actually hear that the Mimic sabotaged whatever blew up in Edwin's face? I didn't think that was ever confirmed. I thought all we know for sure is that M1 was close enough to be called to when it happened.

But i think its Cassie's dad experiencing the "training" for the mimic from fazbear mixed with the data about Afton he has gotten from being fed everything from before. This is all happening through the Vanny mask first, which infects the Dads brain, similar to Cassie as we see from her. Maybe to try taking over his consciousness like glitchtrap..? Just my idea ❤
