Cooking Basics

Hi Hannah, I'm new to the vegan world (3 months now). I'm just now trying the half starch and half veg plate. I love my oatmeal in the morning with some fruit but struggle with quick veg to add to it while i'm working. Are green smoothies ok instead of steaming veg (water, frozen veg and small amount of frozen fruit). I don't really have an appetite for veg in the morning and looking for ideas to fill the other half of my plate. Any ideas on this would be wonderful. thanks so much.

Sauteeing

Place vegetables in a pan over medium/low heat, add in 2-3 tbsp of liquid and cover. Cook 3-5 minutes covered, then take the lid off and continue to cook until all the water evaporates.

Dry Frying

Use a good nonstick pan or skillet. Place food over low/medium heat and let cook uncovered until the bottom begins to brown. 10 minutes for pancakes, 30 minutes for hash browns. Then flip and let cook half the time it cooked on the first side.

Steaming

Place 2 inches of water in the bottom of a pot, place in a steamer tray and add in your vegetables. Bring to a boil, cover, reduce heat to a simmer and let cook 10 minutes or until your veggies are soft when pricked with a fork.

Boil & Simmer

For cooking any stews, soups, chilis etc. place all ingredients in a sauce pan, bring to a boil, cover and reduce heat to a simmer. Cook 20-30 minutes or until done.

I’d rather have oil in my food then Teflon.

My favorite non stick pans are the all clad brand. I know they are expensive but I was able to find mine at Home Goods and TJ Maxx. I have also found my Le Crueset at TJ Maxx for much cheaper.
Also remember not to mess up your non stick with abrasive cooking utensils, sponges or cleaners so they work better. I have ruined a few sadly....

For pancakes super important is how liquid pancake dough is... more liquid it's harder to make it work. Then it's good to add egg or more flower. Some experimentation helps :D
