I boil my potatoes in a bowl in the microwave. I start with cold water and stop as soon as the water comes to a boil. I then place them in a salad spinner to remove water and then into the fryer.

Average home cook can't hand cut potatoes as quickly as a professional cook. I suggest putting the sliced potatoes into a bowl of water as you slice them.

Brother... I just made these fries. My mind is blown - I had no idea you could make fries better than any restaurant fry I have ever had.
I froze mine after the first fry and the next day was able to fry up a couple batches and put them in a warm oven while I made smash burgers. INCREDIBLE fries even after sitting 10-15 minutes while I built 3 burgers for my family.

I am in the process. Allowing the potatoes to cool down after the boil. This is a LOT of work. There is a McDonalds within walking distance. Awfully tempting. 😁

Hello, I am wondering what to do about the oil that cools down quickly. Please help me. When I heat the oil to 205 degrees and then add the fries that I previously took out of the freezer, the oil automatically cools down, and its temperature drops to 100 degrees. Instead of frying them for 4 minutes, I end up frying them for 12-13 minutes because after the temperature drops, it takes a long time for the oil to reach 205 degrees again. What is the problem with the oil cooling down? I set the stove ring temperature to 9, which is the highest setting.

Well, that's certainly not a bad way to make them if you aren't lucky enough to live in Belgium, where it's the national dish, has been perfected for ages now, and where almost every household has a dedicated device specifically for making french fries and other deep fried specialties. Although we're slowly switching to air fryers lately for health reasons. A bit more challenging to make decent fries from scratch in those, but there are some great air fryer fries for sale in the freezer aisle of our supermarkets.

For the first try everything turned out good, but for the second try my fries turned out really sour. I guess my vinegar was too strong. Oh well, my appetite is ruined.
The recipie takes too much time. Not worth.
