Thank you, this made a fantastic gravy for our turkey. We don't have a fat separator but poured the juices in a bowl and used the baster to pull out the liquid below the fat line, worked great. One small addition, a splash of white wine vinegar at the end really boosted the flavor.

I've been making the turkey gravy for our family feast for about 30 years now. Basically, I do it ALMOST like you do. My only difference comes from the person who taught me how to make it: my grandmother. She used an old Mirro brand 'gravy shaker', which I now own. Instead of making a roue, I put the flour in the gravy shaker, then add a bit of warm water, put the cap on the shaker and shake it 'enthusiastically' until the water combines with the flour and it has the consistency of pancake batter. I quite often have to give it another dash of water to get the consistency perfect. When it is, I first turn the temperature of the drippings up so that it is bubbling vigorously. Then I slowly pour SOME of the thickening into the drippings, and using a large slotted spoon, stir until what I added has been mixed with the drippings. If it isn't the thickness I desire, I add a little more and repeat. One note: you CAN'T stir it too much! Once I am satisfied with the thickness, I turn the temperature back down, add a pinch of black pepper, and a dash of Accent. My son said he wished I made enough gravy he could bathe in it! (although the mental picture of that IS kinda disturbing) Today's turkeys usually are quite moist, and hence make a LOT of drippings.
