Hi Alex ! love your show . I lived in Germany for a while and of course I ate a ton of schnitzels , on sandwiches or with a mushroom gravy but my favorite by far was just how you eat it !
Ingredients:
2 chicken breasts, about 6 ounces each, butterflied, and each piece pounded very thin

2 large eggs, lightly beaten

1-tablespoon garlic powder
½-teaspoon Cayenne
Where do you get that mallet?
2 cups Panko breadcrumbs
Serves 2-4

Steps:
1. Prepare the cutlets: Season both sides of the chicken cutlets with salt. Put the eggs in a medium bowl and whisk in the garlic powder and cayenne and the breadcrumbs in another. Dip each piece of chicken in the egg (on both sides) and then the breadcrumbs. Shake any excess off each one. Arrange the cutlets on a baking sheet fitted with parchment. Refrigerate for about 20 minutes. Refrigerate.
Usually I crave these when I watch videos like this. But it just so happens we took a package of chicken out for the singular purpose of eating them for dinner tonight, a snack after, breakfast tomorrow and lunch 😅
2. Preheat the oven to 350°F.
3. Cook the chicken cutlets: Heat 2 tablespoons of the oil each in two large pans until it smokes lightly. Add the chicken cutlets in a single layer and cook, over medium heat, on their first side until golden brown, 3-4 minutes.
Vegetarian here, and I swear I would be really tempted right now to have some of the chicken cutlets!! 😂

Turn on their second side and cook for 3-4 additional minutes.
Place the cutlets into the oven for a few minutes to make sure they are cooked through

Remove the cutlets and drain excess grease on a baking sheet lined with parchment. Season with salt. Place the tray in the oven to keep warm. Repeat with remaining cutlets.

When making Chicken Parmesan it keeps the breading from getting soggy after adding the red sauce and fresh mozzerella before baking or broiling to melt the cheese

Isn't is easier just to buy thin cut chicken breasts? That's what I do, for example, when I make chicken parm, or Puttanesca.

@donna4535As a child we ate more fish than chicken due to Friday fish and the fish market was on the corner down the block on LI by the canal. I would watch them unload the boat and get in first for my mom before the crowds got in. It was great, it was fresh. Now it's near impossible to get fish let alone good fish from local waters and forget affordable. All I see is sick foreign junk and they either ship it to big restaurants or overseas. We were the healthiest kids, our dairy used to be delivered by the milk truck from the farm. By 1968 food stores grew and we got sicker over time. We moved upstate and now our farms here are disappearing and we are in a food desert, full of chemicals, expensive, very hybridized or GMO unless you grow your own, but the farms here are for those visiting with money so the counties survive on Walmart 😮 if you ever find a way to help promote real food please so. Terrell Ave in Oceanside used to be owned by Grandpa Terrell he owned property when he came from Germany up through oyster Bay and such, the government took by eminent domain and built the Seaford Oyster Bay expressway, he was devastated. There used to be farms even in Queens. We would ride ponies at adventure inn until they sold the land in the 70s. Really not that long ago, the island could be biked easily by many even into Brooklyn but now one would get creamed by a car. Praying for better things for our kids and grandkids. @analarson2920PS...never throw out panko just mix with eggs some more flour and make a pan bread season as you season the cutlet or oil and garlic. I got this from a mother's desperate attempt to make a bigger dinner with hungry kids😊no waste👍
