12:41 I can tell you just based on the handle of this strainer this is a matfer bourgeat. He is using high end commercial gear (aside from that lodge, pls get a smithey! :D) These tools are very important for your kitchen. The two most important things you can get and I hope Chef Jean Pierre agrees is a great cast iron skillet and a benriner Japanese mandolin. they will change your game. next to those it's a sous vide, food saver, vita-mix (I use a vita-prep commercial version) etc. God Bless Jean Pierre, he did a filet mignon the old school way and made a perfect medium rare in one take. I do it with a sous vide. he is legend

so he deglazed the pan here at 10:00. this is the absolute best way to not only clean your cast iron without any scrubbing but give your dish the best possible flavour. the traditional way is with wine. you can also do it with water. the technical term is déglacer, he translated it to English for all of us <3

So he's talking about "blanching" vegetables at 6:52 in brine. you do this with asparagus, haricot verts, etc. he's 100% right. It's absolutely critical to maintain colour and flavour in high end cooking. I'm saying this as a person who's been to over 100x 3 Michelin restaurants. everything he's saying is legit. I hope you all will try what he does as it is all correct. my only nit pick is I think that cast iron pan should be heavier :) He's using a Lodge, I would recommend a Smithey! Chef Jean please stop banging the metal tongs on the top of the meal pot, it sounds like a train station. By the way, I'm going to do this, the corn starch did have a little water the blend. I have Marsala and everything else. Lastly if you don't have clarified butter you can buy Ghee it lasts forever. This menu is fantastic, better than having a plain baked potato.

Chef, I want you to know that I made this today for Valentine's Day dinner with the Marsala-fig sauce with fresh tarragon. I paired this with a stuffed mushroom arugula salad and the potatoes fondant, and I followed up with the limoncello tiramisu with the homemade lemon curd. It all worked! I'm tired. Thank you for teaching the world how to cook.

Chef Jean-Pierre is a national treasure. It's upped my cooking game in a phenomenal way. I've got clarified butter now. I make my own demi-glace. I make marsala sauce all the time. This one with dried figs sounds fabulous. I recently made beef Wellington for Christmas dinner with Bordeaux wine reduction sauce. I love Jagerschnitzel with buttered egg noodles and use all his techniques to produce a perfect dish. Thank you Chef!
