You sir are a GOD to me now. I tried this method with a trader joe's piece of salmon and might have oversalted, but regardless it tasted on the fishier side. I didn't ever think before I would have an issue with a fishy taste of sashimi until last week- I mean it's fish! But I understand now. 2 days ago I bought the Costco salmon though, redid the method less heavy-handed on the salt, and have been eating poke since then for lunch. It is amazing. No fishy taste, no tummy ache (from either), and super yummy. I wish I knew this earlier- would have saved me hundreds in college LOL. THANK U x10000000

I tried freezing the left overs like in the video, and I wrapped them with a paper towel. However, the paper towel got frozen to the salmon. Any attempt to pull off the paper towel causes it to rip and the fibers are stuck to the salmon.

Pointer! You shouldn't rinse saltwater fish flesh with fresh water. Make yourself a saltwater bath and rinse your fish in that.

The costco farmed salmon is already pre-frozen, when you buy it, it has been thawed. If you freeze it again, I wonder what is even left from its tste or texture at all

Somewhat forced upon, he was taught the art of sushi making in his teenage years. He quickly fell in love not only with the art but the endless opportunities that came with it.
He has traveled around the globe to try different styles of sushi, most importantly to Japan.
Salmon can or should NEVER ever be eaten raw, period!
After college, Jun had taken an opportunity to live in the motherland of sushi, working for something completely outside the culinary field. In those two years his appreciation of the culture, people, history and food deepened.
He became addicted to the food scene and found himself traveling from one end of the island to the other, eating and drinking some of the best foods and drinks he's ever had. This experience became the seed which eventually bloomed to become The Sushi Man.

The color is added because it’s farmed….please correct me if I’m wrong but orange color is added for farm raised fished (it literally says, added for color sometimes on label)

You mean the farm raised salmon that has color added, eats the poop of other crowded salmon. Fed hormones through its life. I don't think so.
@dommer2162I almost died twice eating Costco wild caught salmon as sashimi. Never had problem with farm raised.
@JasonLee-fc2otI tried curing Costco Atlantic farmed salmon today. I used too much salt. After 30 minutes in the fridge, a lot of water came out, and the salmon fillets became very thin. It was way too salty to eat. Please go easy on the salt.
@OrrlurFarm-raised salmon has the higher level of pollutants and carcinogens compared to wild-caught due to lack of oversight of fish feed. It is definitely not healthy to eat these frequently.
@monkeyaround2066Guy the fish comes flash frozen as low as -160 f so any parasite is instantly killed if the there is any, and they flash freeze it to lock in freshness and taste.

@criticalemBuy a small block of dry ice and put your salmon in a small ice chest with it for 24 hours. That will exceed the freezing requirement for parasites.

@Michael-nt5rpBeen eating costco salmon raw since 2007 and I recall that at some point, I was able to put away a whole pack (albeit a smaller pack) in one sitting by myself. I can't (and shouldn't) do that anymore but yeah. I used to microwave it for about 20 seconds, not to kill the bacteria so much as for the halfway cooked, halfway raw "rare" texture that melts in the mouth and is so addictive, I could eat it by itself without any seasoning or sauce.
@NyanfoodFreezing raw meat doesn't kill the bacteria.

@lhh1273Personally, when i choose Salmon at any store, I choose the packages with the newest dates, people seem to just pick up stuff w/o looking at the details.. Also, I choose the Salmon with the MOST white striations, for more fat. As for the rinse, I rinse in brined iced water.
