This is a super simple foolproof method i've used for a while that produces great ribs every time!

If you've heard of the 3-2-1 method, forget it! You'll get inconsistent results!

I love that Oaklahoma joes smoker it is perfection .Where did you get yours I am in canada I have a offset smoker got it figured out works perty good but the Drum smoker makes more sense the fire and smoke coming from the botom ,Ah one day.

It might work some of the time but if you have 2 sets of ribs and one is slightly thicker than the other, you'll get much different results. You'll risk over cooking one or under cooking the other!

If you smoke until you are happy with the colour (you want to be looking for that deep mahogany colour), wrap them up until they are tender (check after 1 hour and if they aren't tender wrap back up and check every 30 minutes from there) and then glaze at the end, you'll get great eating ribs every time!

Probe tenderness is key, you want to be feeling no resistance when probing between the bones and you want an internal temperature of around 200f-205f/93c-96c.
