• Fresh yeast: ¾ tsp. (3 g) or dry yeast: ½ tsp. (2 g)

• Bread flour: 2 ½ cups (320 g)

I have followed this recipe 4 times now. Each time my dough doesn't look like yours, it's much stiffer and stickier. I made sure to measure everything exactly using a kitchen scale, using lukewarm filtered water so as not to kill the yeast, and tried different ways to let it rise, including out in the kitchen, inside the oven with the light on and inside the oven with a cup of boiling water at the bottom. I'm using stoneground bread flour and instant yeast. I don't understand why my dough and my rolls don't turn out soft and fluffy like yours.

These things are called “Brötchen” and they're anything but new. There are X different ways to make them; my favorite is to put a slice of cheese on top 5 minutes before they're done.
