I made Spanish tortilla three different ways to answer one delicious question: which method makes the best tortilla de patatas?

In this video, we compare three distinct styles—from the traditional spanish tortilla to one with slowly caramelized onion and, finally, the controversial runny style. Same amount of potatoes, same Arbequina extra virgin olive oil, but three very different results. Which one would you choose?

A quick note before the recipes: for each tortilla, I started with 1 kg (2.2 lb) of whole potatoes, which became approximately 800 g (1.75 lb) after peeling.

I found a recipe here on Youtube from a Michelin star restaurant in England using potato chips. I tried it and it was quite good. This comment are for you lazy people out there. A bag of salted chips, fry some onions a pinch of black pepper, egg and voilà - a tasty tortilla! Be careful with the salt since salted potato chips in a bag are really salty. For the caramelized onion, I slowly cooked 400 g of raw onion with a little Arbequina extra virgin olive oil until it reduced to approximately 200 g. I then used 100 g of it in the second tortilla.

Having lived in Spain now for 23 years eating and experiencing Tortilla from different parts of Spain is really great. In fact one of the things I miss about my last Spanish girlfriend is her Tortilla 🙄🤣🤣

Todas lucen espectacular ;) For me between also the third but a touch of onion still. Remove / cook as much water out of the potatoes as possible, salt potatoes again before frying, add a bit of onion when the potatoes are at least half cooked so the onion doesn't get too sweet, leave potatoes and egg a good time before cooking again, and cook to the consistency you want. Personally I dislike carmelized onion in tortilla. It's like Gordon Ramsay cooking Pad Thai to me or something jaaaaaaaaa.

Tengo que puntualizar un pequeño error que has cometido por puro sesgo de Experto, En un video orientado a Giris con cero experiencia en hacer tortillas freír la cebolla y la patata juntos es un error, por que intentarán hacer lo mismo si se animan a cocinarla, Y cuando no tienes experiencia cocinando este plato es fácil que les quede mal, para novatos es mejor decirles que tienen que freír los ingredientes por separado para controlar mejor el punto de cocción de cada ingrediente, lo de freírlo todo junto solo lo debería hacer alguien con mucha experiencia en la cocina.

I have pretty much made all three versions. Not to over egg or intrude on your tortilla-making process, my observations: firstly, you really did a top job here (not high praise really coming from an Englishman...ahem) but it's clear you understand the premise of making tortilla de patatas. I think that the second and third version make the best tortilla if it's going to be eaten up soon. The first version allows for refigeration and heating up for serving later on. Of course another big consideration is the quality of the potatoes, eggs and olive oil; if they are good, the tortilla is good 🙂
