Gordons example has caused an epidemic of sadism and bullying in the restaurant trade over the years with chefs copying Gordons aggressive behaviour. The idea being promoted is that to be a great chef you have to be a loud mouth aggressive abusive extremist. Really is sickening to watch for anyone who can think for themselves and not go along with the herd. An excellent chef starts and good kitchen management starts with being an effective assertive communicator whilst maintaining high standards. assertiveness and effectiveness is something very different from abusive aggression and showmanship for the camera. A true pro chef knows how to run a kitchen to high standards without causing anyone any trauma.

John took the lobster problem as a wakeup call. Six years after that happened I had a meal at Mama Maria's with the classmate I was chaperoning through New Jersey and New York. We had a phenomenal meal.
