Hey everyone and welcome to my first Pho tutorial. I'm a professional Pho chef by day and although I mainly do Pho reviews I'm starting to get into tutorials and how to videos because my mission on this channel is to help people right around the world cook a better Pho.
i like that he is telling us what he does.. but why not give us instruction on times and temp? i mean he did say he wants to teach everyone to make better looking pho right?
then overall... is there a taste difference? or is it all just a visual?
In this video we take a look at the traditional parboiled bone method which produces a dull flat Pho broth. Then I show you a simple step to up your Pho game which produces an even more fragrant and better looking Pho broth.
The prerequisite? An oven and some spare time.
after you roast the bones do you need to blanch them and clean them or what are the steps? also how long do you roast an at what temp?

So what i saw in the video. Even after roasting you still do a parboil. I saw him dump out the water after boiling the roasted and then added more water. Did I see it right?

I make my broth like this too but in reverse order. I parboil my bones, clean, and then bake. If you want to take it up another level, instead of baking the bones in the oven, put it in indirect heat over a charcoal grill. You'll be amazed, some gem for whoever is reading.

@MartinGerheuserYES!!! I’ve had the experience also. Totally agree. It takes less time and the flavors are so much deeper! My mother used to make it. Her pho was the best on the street. No one makes it like her.

@andreoutcastI have been advised to clean the bones thoroughly - removing excess meat and marrow, before utilising in a pho broth.
Have you tested this?
Yeah like common house hold has all that equipment to make pho. You need to down size it and use household kitchen equipment.

@pakue9869We use to own a pho restaurant and we also roast our bones before we made the broth. This guy knows what he's talking about. Great video and great information.

@doheo33Pho broth is not suppose to look brown. It is about clarity, and the essence from the bone. If it is better in flavor, that is a different argument.

@bloodcum4071After you put bone in oven to roast, you then put in stockpot to boil, do you discard the 1st boil like u would if u didn't put in oven? Thanks .
@dianaong4989When I make a bowl of pho at home I use Top Raman shrimp flavor noodles. I cook in a cup of chicken broth and 1/2 cup of beef broth.
I add half the shrimp flavor packet and a teaspoon of fish sauce, 1/2
onion, chopped and sautéed, shrimp and imitation crab meat. Maybe
I have some bean sprouts but if not I'll add almost any vegetable I have
in my fridge. I need to get some star anisette for that authentic taste.
