Do you have success freezing these salsas? The salsa roja too for that matter. I have good success freezing home made spaghetti sauces and am curious about the salsas. It is just to two of us so we can't consume things as fast as we used to.

My niece Roast tomatillos Serrano's jalapenos Anna garlic in the oven blend it when it's all roasted adding cilantro an avocado lime juice salt and pepper so delicious tomatillos can be very acidic

Stage 2and 3 are perfecto. Your "stage 4" I would consider "Salsa Americano" ... which is mild-overboard.
However... That is just my opinion as a white American dude, who loves Mexican food and culture. In short, There is no "Wrong Way" to do it! Viva!

Cut 20 jalapeños in half and remove stems. With a spoon remove the seeds and the whites from the jalapeños. Sauté in canola oil till soft. Add to blender and blend creamy. add knoll chicken bouillon to taste. Sauce needs about a tablespoon of canola oil, if it comes from the pan or bottle doesn’t matter. Shouldn’t need more than a tablespoon of knoll, but again, to taste. If you want it hotter, don’t remove the seeds from a jalapeño or two. I’ve won salsa competitions with this recipe. I eat this on breakfast tacos daily. And it’s soo easy. Taco deli has a green sauce they sell at heb that is similar but it’s expensive and just isn’t the same.
