Weird to me that duck and orange is unusual to them. In the US because of Chinese influence duck sauce by default is an orange sauce, it even comes in the package with the duck

@Ashley-l1i3kKush is amazing. I love his tuitions and hacks. I have been cooking professionally for over 30 years, although I have no formal training, and Iām always learning new things. I watched the spices masterclass and really loved the addition of ghee and garam flour to the spice mix. I was taught about chef seasoning and normals seasoning by my mentor Borgat Provol, a German chef and restauranteur, but watching this with Kush has really taught me lot. Another bonus is I do have a Kush crush.

@Lisafer74This was super helpful. For medical reasons I'm supposed to be having less salt so I often leave it out when cooking from a recipe, but it's very helpful to know where it's actually essential/effective.

@KinzleyMarieIt's been a while since this episode came out, but it's very fun to watch while you're having some fajitas for lunch! I feel like I learned a lot about seasoning here! Gonna have to work on that "toast the seasoning in the cooking fat before you put your ingredients in" technique, and I love Kush and Mike's dynamic and the friendship they have. This felt very calm, warm, and cozy even as we learn a lot from Kush- I also appreciated that he took the time to say that Mike's duck at the end was good home cooking and totally reasonable for an ordinary dinner at home.

@jasminetaylor3258The biggest take home for me is that adding salt early breaks down cell walls to increase sweetness. I just though salt was to do with activating your saliva glands more so that you can taste more of the flavour.

@Whoop0Like all the others here I love the pairing of these two. Kush has the right amount of teacher/friend vibe and Mike is engaged, curious and not intimidated but eager to learn. I was wondering if this dish could be adapted to chicken for a cheaper/more accessible option. If so what changes would Kush recommend? Maybe I haven't paid enough attention, but I've never seen you use the whole lemon. It's always zest, from a whole lemon, a bit of juice from a whole lemon.
What happens to the rest of the lemon?

@hanyandme"Pasta water should be as salty as the sea" is said a lot, but it's ridiculous. If you actually salted it that much the pasta would be inedible. I guess the saying came about to encourage people to put in more than just a pinch of salt, but it absolutely shouldn't be taken literally.

@Justgabs-wn3vvThis made me realize that I probably overseason the majority of my dishes. Kush's comment about wanting to taste "all the vegetables, taste the pasta, a bit of butter, and that's it" stuck out to me. I've always been amazed at how, despite my dishes packing flavor and not being bland, dishes at restaurants by professional chefs taste so much more despite having fewer seasonings.

Love all the sorted videos, but keep coming back to Kush's masterclasses! They are inspiring and engaging. In the podcast interview Kush's experience cooking vegetarian food stood out. Perhaps a vegetable masterclass? Taking veggies to the next level? Could be a series focussing on specific types of veg in each episode :)

@Dead209Kush (Ben too) is such a good teacher. Intentional, has a plan, explains at the professional level making sure the student is understanding to the best of their ability without being patronizing or condescending, never makes the student feel stupid for making an incorrect statement, instead builds upon the statement to explain the misconception.
