Today we make the beef stroganoff recipe that I wish my mom made me as a kid. Beef stroganoff was always a little bland but anything over noodles I love. We fix all the issues today by using the braising technique and instead of using steak, we use short ribs and some high-quality mushrooms. The recipe is a dream.

So I made this recipe about a month ago and it came out pretty great. There are some changes that I would personally make.

The biggest thing, is when cutting the carrots, the volume of carrots should be equivalent to the onions. I definitely was missing the carrots after. Everything else came together beautifully. I used cheap red wine. I think I used more garlic than the recipe called for but not a whole lot.

I enjoyed it with egg noodles, but I did only have access to the cheap kind. I had access to a really good paparadelle, and I loved it more with that.

I wish I had a pressure cooker and I wish that I could use it for this recipe because it does take a while to cook.

I'm going to attempt to freeze it. I'm optimistic that this will freeze well, but we'll see.

I'd give this recipe four out of five stars. The only reason that it's not five stars is that it's a very time-intensive recipe and that the recipe on the site should reflect carrots by weight. But I would definitely make it again and again.

Tried a lot of versions of this dish and it's just the best! I did use a really nice chuck roast. I do add a little bit of lemon juice in the sauce, the added acidity makes it pop. Again, a fantastic dish.

Cooked this recipe according to the recipe in the description. The first attempt was stroganoff soup. The technique here is awesome, just needs some tweaks.

1. Use 2x beef
2. Only use enough wine to deglaze, and then a little more for flavour. Don't drown the vegetables in it.
3. Use only 3 cups broth
4. Add beef bouillon for an extra kick of beefy flavour
5. Use wide egg noodles unless eating with a spoon and chopsticks.

There...fixed it!

Fantastic! Made per directions. Best stroganoff I've ever had. And I know what you meant about your mom's version. My mom made beef stroganoff using the Schilling dry mix packets. Hey it was the 70's! Still liked it even though her beef was always overcooked and tough pieces of sirloin.

I live in central Florida so my access to quality ingredients, even down to the selection of egg noodles is very limited. With that being said I used this braising technique for the stroganoff and it was lights out. I used to work as a waiter and bartender at high end steak houses on the west coast and it was that good.

I've made this a few times now, and every time, it is absolutely God tier every time. I like to use 1lb of beef chuck roast and 1.5lb bone in short ribs. I recently started adding a heaping tablespoon of Dijon and I'm definitely going to continue doing it in the future.
I also started making pot pie crust and baking a disc's size of that and adding it on top of my individual bowl of stroganoff and omitting the noodles completely.
A side note, leftovers freeze incredibly well.
