The problem I have with this is the one I wanted to know about the most was the one with the cornstarch. And you did it wrong by adding way too much cornstarch and then didn’t redo it to correct the experiment.

You should’ve redone that one because it’s not a fair rating when you’re giving it a low rating because you made a mistake instead of what it really could’ve been possibly a good rating IMO

For smoke points it is good for foodies and new cooks to do some research ( I don't mean you Mike, you're thorough research and explanations are on point). Below are the smoke points of common cooking oils. With Mike cooking at 380F (193C), you can even use EVOO as this temperature is inside of it's smoke point range. I bring this up because the costs of some oils could make using them prohibitive to newer cooks and could discourage them from trying certain recipes.

NOTE: Oils come from all over the world and are not consistant in quality or even smoke points within the same type of oil. Make sure that when you are using an oil that is new to you, either by brand or type, that you pay attention to how it interacts when you are cooking with it.

Avocado oil, refined 520°F 270°C
Safflower oil, refined 510°F 265°C
Sunflower oil, refined 437–450°F 225–232°C
Rapeseed / canola oil, refined 400–450°F 204–232°C
Vegetable oil 400–446°F 204–230°C

A couple of days ago I succeeded in making the best French fries in my air fryer, I made the fries and put them in a pot of boiling water with a teaspoon of sodium bicarbonate (not 100% sure if it helps but it does make the water foam up) one teaspoon of Himalayan salt and a half cup of white vinegar, I boil for 4 minutes and put them is a strainer, I noticed the fries has a fluffy rough texture that soaks up the olive oil and makes my garlic and herbs stick, I air fry at 400 for twenty minutes and finish off at 450 giving them a good shake. The ultimate test is that my wife and son finish them off with no leftovers.

That soak fry put in the fridge, refry is too many steps. I have a hungry bunch, and I bought an air fryer to make cooking easier and faster. That kind of preparation of French fries involves too many steps and too much time.

After you par boil them, Dry them off and then FREEZE them solid. The freezing action really breaks up the potato structure some more, and creates a better fry. Still though, I think oil frying is king

Can we freeze the fries after the first air fry? Then 2nd fry when we want to eat some? Since it’s a lot of time involved, I was thinking of doing a big batch and use as needed….

You should try to add some (a lot of) oil and steer, let it soak the oil, before serving

I get superb results but i dont cut my potatoes into sticks. Slice a potato so you end up with 2cm edges, usually 6-10 chunks, then steam them for 20-25 minutes. I usually do several meals' worth. Let them cool, then into the fridge. This used to be known as batch cooking. Get home from work midweek, precooked cubes into the fryer, no messing, no 2nd fry. Just spray or toss in olive oil, rapeseed, whatever is to hand. 20 mins, 25 if you're enjoying the wine.

King Edward or Maris Piper spuds (I think Yukon Gold are the closest ones in the US), cut up into approx 13mm (half-inch) strips, rinse in cold water, pat dry, put in bowl, add 1tbsp of cornflour/cornstarch (you WAY over did it), toss, add 1.5tbsp sunflour oil, toss again, season, pre-heat air fryer for 3min at 200c, add chips, cook at 190c for 20min, shake every 5 min. Fluffy, crunchy, quick, easy.



Personally, I like garlic salt, black pepper and paprika as seasoning.

Other than #1 ~ What a hassle ~ Don't get me wrong the others sound great but who has the time to wait to go through all those steps ~ Really ~ If you had kids and a gun the mayhem it would cause would drive kids to use it (Just kidding) my dog would drool a pool of water in my kitchen that would cause me to call 911 ~ Thanks for your experiment ~ I learned a lot ~ Buy frozen fries and put them in your toaster oven or go to McDonald's ~
