Years ago I used to have a restaurant down in the Tex-Mex and taqueria territory of San Juan, Texas.

In an effort to serve consistent, delicious salsa roja to the customers I needed to make large batches at a time. This is the exact recipe I came up with that kept everyone coming back for more.

Ah, ban-aids on the fingies early on in the video. This recipe is going to be legit. I'm excited to see what happens when those peppers/lime/acid makes its way through to the cut. Keep bringing the great content.
5 roma tomatoes
5 serrano peppers
I do eat the whole bowl 😅 I'm a certified salsa addict. I make mine the same way, except for adding the chipotles. I'm definitely going to add that to the mix.
I'm not a fan of the cooking method. I believe it is the texture I don't like.
A handful cilantro
¼-⅓ Onion
How long will this keep in the fridge?
1 Can crushed tomatoes
3 Canned Chipotle Peppers in Adobo Sauce

@gdtravlerMade this. Absolutely outstanding. Only sub was pickled moritas instead chipotles in can. Same pepper except dried and pickled. See Rick Bayless for recipe - very easy and wonderful to have in your fridge. Took a huge bowl to work, big hit. All of my Mexican co-workers loved it. Authentic and delicious.
@beijingwingsWhen Mexicans tell you that salsa is slightly spicy, you can be sure it's extremely spicy, but if they warn you that the salsa is normal spicey, you'd better stay away from that salsa for your own good!

@kd3655If u grow ur own jalapeños and serano chiles, the heat is consistent. The heat from a chile is not consistent from one tree to the next. That ones free, next tip theres a fee.

@elvinexellI bought some serranos one time to use in spicy udon and I must have had some kind o' luck because when I finished cooking and took my first bite it felt like my entire mouth got whacked by a swarm of hornets. I had made that dish 500 times but that particular time every single chile was a fucking ripper. I'm okay with heat normally but by the time I was halfway through the bowl I had to take off my shirt and towel my face because I was sweating like a whore in church 😂
My girl kissed me goodbye on the way out to work and she instantly started hopping up and down and crying. She was legitimately super mad because she thought I did it on purpose lmfao 😂
