►1 Tbsp baking powder

It's my grandson's 4th birthday and instead of two 9 inch pans I was hoping to use a 11x2.7 inch pan then bake three seperate cakes. Is there a way to adjust your delightful recipe for this bigger pan? Your advice would be much appreciated.

Frosting
1.5 sticks of butter for 5 mins( light in colour and creamy)
4 1/2 cups of icing sugar
1 tps at a time
1/4 tps of salt
4 tps vanilla extract
Cake instructions
Prepare pans with flour
Dry
2 1/ 2 cups flour
1 tps baking powder
1/2 tps salt
Wet
1 cup of butter(1 1/2 sticks
1 1/2 cup white sugar
Medium speed for 5 mins when mixture is thick and fluffy scrap bowl
4 large room temp eggs
1 by 1
4 tps vanilla extract
Add flour and 1 cup of milk
Best until everything is thick and smooth
Why does my butter and sugar and egg mixture keep curdling? 😢
