all wrong, mixing onions with chicken instead of cooking them. chop that coriander,stalks are for rabbits. making a chicken broth,not a curry.

I saved this recipe a year ago but only got around to making it tonight. I am absolutely delighted with it. It not only tastes great but is remarkably simple more or less based on store cupboard ingredients (I always keep garlic, ginger and chillies in the freezer, tins of coconut milk and of course the spices). Only need to buy the chicken. This not only tastes authentic but it is cheap and healthy. Most of the bottled curry sauces are not only expensive but filled with unhealthy ingredients. 1 - Brown (Yellow) Onion, Sliced

4 - Garlic Cloves, Minced
25g (0.8oz) - Ginger, Peeled & Minced

2 Tbsp (50g) + 1 tsp (10g) - Coconut Oil or Olive Oil
750g (1.6lbs) - Chicken Thigh
Can you substitute dairy cream for the coconut milk?
3 tsp (7g) - Ground Cumin
2 tsp (3g) - Ground Coriander
Yea! Basmati. The king of rices.
1/2 tsp (1.5g) - Ground Cloves
2 tsp (6g) - Smoked Paprika

I've been making something very similar to this for over a decade, except I add a can of chopped tomatoes, or passata if I really want it rich, and I also add sweet potato and chick peas. It's excellent every time!

@superiormind666So, trick, coconut cream separates leaving milk and cream separate. I use the milk and a bit of the cream and I have other milks on standby just in case it’s a little too creamy, but I’m pretty good at using the right amounts
