Some of the best ribs I’ve ever done were at camp, on a campfire. I would use a tripod to maintain the height/heat, good bed of coals, covered them only above the ribs with foil as to create a little oven. The ribs were on the “open pit” 😁 no 3,2,1 no wrap, they fell off the bone every time with a wonderful smoke! Cooked and then sauced for a finish…

I don't know Kent, those ribs look overcooked to me. Tender is good, but lack of bite kills a rib experience as much as tough ribs for me. To each his own I suppose.

I have cooked ribs smoked and grilled. Grilled ribs are not even close to being as good or better than smoked. This a great recipe for someone that does not have a smoker. But to say stop smoking ribs is crazy in my opinion.

Hi Kent, I do exactly what you do but in reverse. I season the ribs, pre cook them on the grill with alot of smoke for about 45min., and then put them in an aluminum pan just like yours and put a thin coat of BBQ sauce on them and put in three cups of water. Then I seal it up and bake them in the oven at 350 for an hour and a half. Done! Thanks for the video!

As much as a love your channel and cooking I am complete disagreement with this method, unless,
Your someone who doesn’t like the smoke taste…..famous Dave’s in my area cooks their ribs and brisket this way and we caint stand it. I love the smoke flavor…you cook your ribs correctly you want to have to pull the meat away from the bone, it you want fall off the bone, cook them how you do pork butts.slow smoke but you out a water pan in the smoker, beer, onions,
You same seasoning…4hrs is plenty at 225-250….2hr good smoke at 225, then add the water pan and bump to 300 if you want them sooner. You get a great smoke ring, flavor, and the fall off the bone

Cut it out....Just CUT...IT...OUT!!!!!!!! You're "ribs" don't have a chance in HADES compared to the LEGEND that is ALTON BROWN! You should be ASAMED of yourself for this version of "Ribs"! HIS...simply BURIES yours! It puts you to SHAME! And it is Much, MUCH easier and simpler!!!!! Now--don't get me wrong: I OFTEN like your vids--and some, well NotSoMuch! But THIS one?!? It's a joke that no self-respecting comedian or cook would be willing to tell! The recipe/procedure SUCKS! Just semi-BOIL them, season as liked, bocer them i with BBQ sauce, , make an aluminum "tent", and POP them into the HOME Oven, and cook at 265 just over boiling temp--take em out, open the "tent"...save the jucies--and tent OPEN--345 degs form 15/20 mins if ha want crust!

Fall of the BONE?!? Hell--impossible to KEEP them on the bone! SUCCULENT...DEEE-LICIOUS...PERFECTION! You LOSE this one!

Good thing I'm eating pizza with beer or I just might be eating my monitor. Everybody's got their method - I season with salt/pepper/paprika wait about 20 minutes then bake in a covered roasting pan with water and apple cider vinegar at 250 for about 4 hours, then finish off on the grill with Meathead's Kansas City BBQ sauce that I make. If I bake too long, I can't keep them from coming apart! I might follow this if I had a bbq that burns wood.

Used your method Kent. Only thing I did different was use the mustard for a binder. I’ve never cooked ribs and had the bones poke out from the oven like I did using this method. Thank you sir. Very tender. Also used the oven. 2.5 then checked and put back for another 30 minutes.

July 4,2026, I tried your rib recipe, done totally in my oven, two and a half hours was perfect, I kept the wire rack under the ribs while they were cooking, then dumped the broth and then turned on the broiler and added bbq sause for 15 minutes, turned out the best baby back ribs I've ever had. Thanks kent

Stop cooking back ribs - they're already high on the hog. If you can't get them tender then buy you some Lloyd's, cook em in the oven and call it a day!
Spare ribs are king of flavor and meatyness!
