For some reason my mind thought of a theory that Leander (the taste tester) wasn’t human, which was why he didn’t appear to be intoxicated or poisoned by the amount of alcohol they ingested. The specific mixes that caused inhuman reactions were likely strong enough to activate something in their biology or DNA structure, and that causes them to transform into a variety of different things.

Edit 1: Now that I think about it, maybe the doctors at the hospital he frequently visits are actually scientists that are able to reverse the effects??
