Born and raised in central Pennsylvania "amish country" and we put the beef n noodles and thicken the broth a little almost into a thin gravy and put it over mashed potatoes.

Chef John - this reminds me of stuff at the county fair in Ohio. However, a couples of shot of Worcestershire sauce for the aromatics is needed. Quality beef broth is more difficult than chicken. My Rx is Trader Joe's augmented by BTB beef to taste. I don't understand why more families don't eat this type of fare at home. If you don't have green onion or chives for garnish, a handful of frozen peas from the freezer works.

Moms is simpler, too simple. Simmer stew meat until tender, add salt pepper and noodles, cook until noodles done. Mashed potatoes are usually on the 2nd day. I enjoy bread and butter to sop up the broth

WOW!!! Made it as suggested, but I did add button mushrooms and 2 cloves of garlic.

This recipe has SERIOUS beef flavor - it's just a great recipe. If you like beef and noodles, you have to make this.

Oh, I was skeptical about using all 12 ounces of noodles with the amount of liquid. Don't worry, it works. Sorry for doubting you, Chef John.

I know that he put the beef and the accumulated juices into the pot the first time, but he took them out again when he cooked the noodles. I was just wondering if you had to pour in the accumulated juices also the second time?

I have made this 3x. Its absolutely fantastic but you have to use bought stock or broth. If you attempt to make it with bullion it will be too salty and not taste as good.

I can't stand onions, especially cooked, ever since having COVID a few years back. Onions don't taste the same at all anymore. Always disappointed now when a recipe looks so good but relies so heavily on onions for flavor! 😢
