Ingredients

Sugar – 130g (⅔ cup)
Vegetable oil – 120ml (½ cup)
Plain flour – 150g (1 cup)
Baking powder – 1 teaspoon
Baking soda – ¼ teaspoon
Milk – 60ml (¼ cup)
Vanilla extract – 1 teaspoon
Salt – a pinch

Equipment

Measuring cup size: 240ml
Baking pan: 21 × 11 × 6 cm loaf pan

Bake in a preheated oven at 170°C (350°F) for approximately 40–45 minutes.

Method

In a large mixing bowl, whisk together the eggs, sugar, vanilla extract and a pinch of salt for about 3–4 minutes, or until the mixture becomes pale, light and fluffy.
Pour in the vegetable oil and whisk for another 1 minute until well combined.
You can substitute the vegetable oil with melted butter if preferred.
Sift the plain flour, baking powder and baking soda directly into the bowl.
Gently fold the dry ingredients into the egg mixture until almost combined.
Pour in the milk and continue mixing gently until the batter is smooth and evenly combined. Avoid overmixing.
Pour the batter into a lined loaf pan and spread it evenly.

Bake in a preheated oven at 170°C (350°F) for approximately 40–45 minutes, or until a skewer inserted into the centre comes out clean.

Allow the cake to cool slightly before removing it from the pan.
Serve warm or allow it to cool completely before slicing.

with total ingredients weight of 600 g will this not produce a very short loaf cake in a 21 × 11 × 6 cm loaf pan ? I would expect the ingredients to be closer to 850g. What is the purpose of the Baking Soda in this recipe as there is no acidic component to neutralise the base - from the end result it is also not for colour
