Sauce: 1 tbsp Sichuan chili oil, 1 tbsp soy sauce, 1 tsp Chinese black vinegar, 1 tsp sugar, 1 tsp Sichuan peppercorn powder, 1 tsp cumin powder, pinch of salt.

Cut potatoes into thick spears using a crinkle cutter (about ½ inch thick). Soak in water to rinse off excess starch.

Heat neutral oil to 370°F (190°C). Deep fry the potatoes for about 3 minutes until tender inside but holding their shape. Transfer to a mixing bowl.

Instructions:

Slice potatoes thinly and cut into fine matchsticks (julienne). Immediately soak and rinse in water until the water runs clear to remove starch.

Wow that took me right back to the streets of Chengdu.
As a German it's a stereotype, but I love potatoes - there has to be some base for that.
I could smell and taste each dish from memory.

I so much enjoyed the food. My husband was there for work and studies at the people's hospital, I only ate like a hobbit all day and played mahjong in the park. It was a blast and a suprise at every corner.
Albeit being gay and already married I nearly got married to the daughter of one of my fiercest Mahjong adversaries, but we settled on pickled rabbit heads and snow beer instead of marriage.
I really miss Chengdu and the people there.

Bring water to a boil with 2 tbsp vinegar. Blanch potatoes for 20 seconds until slightly translucent. Drain and shock in cold water immediately.

What is chinese black vinegar REALLY? Is it like balsamic? I can't find any in my country so wondering what would be the closest substitute?

5. Sichuan Chili Oil Potato Salad (Liang Ban Tu Dou Pian)

Ingredients:

1 large Russet or 3 Red potatoes, peeled and thinly sliced

2 Green Onions, chopped

Chili Oil Base: 2 tbsp Chili flakes, 2 Cloves Garlic (minced), 1 thumb Ginger (minced), 1 Shallot (minced), 3 Thai chilies, 1 tbsp Sesame seeds.

Sauce Liquid: 1 tbsp Soy sauce, ½ tbsp Oyster sauce, 1 tsp Chinese black vinegar, 2 tsp Sugar, 2 tsp Sesame oil, pinch of salt.

Instructions:

Make the Chili Oil: Place chili flakes, garlic, ginger, shallot, Thai chilies, and sesame seeds in a heat-proof bowl. Heat oil to 400°F and pour over the spices in two batches to release the aroma.

Boil potato slices with a pinch of salt and vinegar for about 2 minutes (cooked but crunchy). Shock in ice water immediately. Drain well.

In a bowl, mix the liquid sauce ingredients.

Combine potatoes, the liquid sauce mixture, and the fresh chili oil. Add green onions and toss until coated.
