think the trick with the dumplings isnt to flip them over, its to just slide them out of the pan onto the plate, that way you can keep the cute little dumpling appearance, and still have that crispy skirt, and the same pick up and pop in your mouth enjoyment of dumplings

I’ve had success retaining burger moisture just by mixing in dried onions. Roughly 1 tbs per lb.
